Google 'Blue Elephant Thai Cooking School', the best if you are really serious.

find youtube channel, it's free

My wife is a good cook but still learns new recipes from YouTube.

Too easy and as you say ....free.

Much better than paying a school to teach you as they will only show you their way.

If you want hands on lessons in BKK, go checkout UFM..www.ufmeducation.com. I just learnt so make Nam Tod, Sai Ou and Moo Ping.  You can take private lessons (very affordable) and learn what i want.  They teach in English.  If you like street food, you can also ask if they can teach you how to make what you like to eat.  I was on one trip and I found a deep fried puff with pork floss/curry filling, they were able to teach me.

I’ve taken a class at blue elephant.  Too fancy and expensive for cooking classes.  Wandee Thai cooking school offers chef courses.  You can get certified to cook Thai food.  Lots of choices.  I go to UFM everytime I visit Bangkok.
