Earlier this year I went to Thailand and I remember when I used a local SIM it installed something on my phone. I dont remember all but at the minimum it installed a few phone numbers in my contacts. Is this normal in Thai? How to look for SIMs that doesn't install stuff on my phone?

Simply delete them if you don't need them. Perhaps some are useful service numbers of your phone company.
