If you are on a spouse visa to UK, can you just stay on these types of visa without applying for permanent residence? And if you are on a spouse visa do you have to stay in UK for any length of time or can you go back and forth to Thailand as often as you like.

By "spouse" visa I assume you mean settlement visa. A settlement visa will be valid for 2 years and at the end of the 2 years you will have to apply for Indefinite or Further leave to remain in UK. To apply for either you will have to prove you are living together and have a life in UK. Also during the validity of the settlement visa you would be expected to be spending the bulk of your life 'settled' in UK, your wife is permitted to leave the UK but if it looks to the IO on an entry that she is spending too much time outside UK he could cancel her visa on entry and land her as a visitor or even refuse her.
