Quality Ingredients From All Regions Of Thailand Head To Gala Dinner For APEC Leaders

BANGKOK (NNT) - The best food ingredients Thailand has to offer are making their way to the APEC leaders’ meeting in Bangkok this week. Chef Chumpol Jangprai, who is in charge of the gala dinner for APEC leaders, indicated that all ingredients are domestically sourced. The concept for the gala dinner is “Sustainable Thai Gastronomy”.

 

Mr. Chumpol said 5 courses of Thai food will be served at the gala dinner. The first course will be Amuse-Bouche, followed by Appetizers as the second course, after which will come a salad, the main course, and dessert. All menus are halal. The focus of every menu is the 100% use of Thai raw materials.

 

The menus were designed in keeping with the 2022 APEC theme of “Open. Connect. Balance.” The chef explained that 8 flavors of Thai food are being used to “open” the gourmet experience for gala dinner participants. The sourcing of raw materials from production sites all over the country, including GI-enabled products, lends to the “connect” part of the theme. The use of Sufficiency Economy principles and adherence to sustainable development provides for the “balance” part of the theme.

 

The Amuse-Bouche will include crispy golden cups with cream sauce and sturgeon roe. Products from Doi Inthanon royal project will form part of this course.

 

Appetizers will comprise highlight menus from 4 regions of Thailand, served in bite sizes on a map of Thailand backdrop. The course is named “welcome to Thailand”. Khao Soi will represent the North, Tom Yum will represent the Central Region, grilled Khorat Wagyu beef will represent the Northeast and grilled Betong chicken will represent the South. These menus were sampled by press members covering the APEC Economic Leaders’ Meeting this week.

 

The salad course features a Thai spicy salad that uses 9 organic vegetables from community enterprises in every region of Thailand. The salad also uses organic chicken, rainbow lobsters from Phuket, and pickled duck eggs from Suphanburi.

 

The main course consists of beef masaman curry, mixed Thai vegetables ratatouille, hybrid groupers, Thai Hom Mali rice, and a brown rice mix. The beef is sourced from the famed Phon Yang Kham cooperative in Sakon Nakhon and the hybrid groupers are caught from the sea off Phuket province. The Hom Mali rice is from the Kula Rong Hai area.

 

The dessert course features Thai baked custard with passion fruit sorbet. Side items include Darathong, Thai brandy-infused chocolates from Chiang Mai, steamed flour with coconut filling, lychee macarons, and pandan pudding. Thai fruits are also offered along with tea from the Northern Region and coffee from Nan province.

 

The food menus reflect the government’s intention to make the hosting of APEC 2022 beneficial to all members of the public. All opportunities to present quality items from all regions of Thailand have been leveraged for the purpose of extending economic cooperation.

I didn't see anyone down Soi 2 near me snapping up the Thai street delights this morning?

I wonder why?
