Do they check in airport your return ticket?

Yes they do and if you don't have the right type of visa they may deny boarding so better to have some kind of onward travel ticket.

i dont need visa... i am from eu so I get 2 months plus extension right? total 3 months?

you can come without a visa but it is recommended you get an onward ticket flight to show to the airline prior to boarding, so they can see that you will leave the country later. It's the airline that want like that, before you fly to thailand. You can buy a cheap onward ticket, from thailand to a nearby asian country, very easy
You could also buy ticket from some thai or asian airlines but it will cost you more. It's up to you

I will use 1 way ticket and then buy return ticket after few months.

Do they check in airport your return ticket?

There is no definitive answer, as many people will tell you yes as will tell you no.  But even asking the question suggests you already knew that.

OP, your question comes up often.

Some discussion here.

https://aseannow.com/topic/1318022-do-you-really-need-an-onward-flight/

You can buy a "rent a ticket" here is one of many companies

"onwardticket.com" approx $16 usd.

You can but cheapest throw away ticket approx 2k baht.

You can hope airline does not ask and if they do step away and use one of first 2 options.

Obviously you would need internet.
