Good morning.

Today's breakfast: Chunky Soy Milk Bread Porridge with tuna and vegetables.

Fast, easy and filling one dish meal.

Ingredients:

2 pieces of white bread(chopped into small dice), soy milk, canned tuna, Chinese cabbage, okra, onion, pumpkin, spinach, and water.

All vegetables are pre-cooked with microwave.

 

Bread can be any kinds.

Soy milk can be substituted with milk.

 

Seasonings:

Chicken stock, soy, oyster, and fish sauce, grated ginger.

 

Cooking time:4 minutes at 500w(if all the vegetables are pre-cooked).

A bit of Home Cooking hack.

If you prepare your meal at home on regular basis, good to stock certain amount  of

pre-cooked meat and vegetables you often use, in your fridge.

This way, you can save your cooking time.

This method particularly suits one-person household.

 

Do you have any empty jars of used up jam or mayonnaise at home?

They serve well for this purpose.

 

Put the food stuff and cook in a microwave(with a non-metal cover on its top).

Time duration depends on its contents and amount.

These Thai jars are made  very tough(thick), and never damaged while heated up  in a microwave (in my experience).

 

Wait for it cool down, and into fridge.

No contact with water while it is still hot; will crack.

 

Hope this info helps to make your daily cooking more enjoyable and time efficient.

Some Cooking Hack again.

When you want some soup noodle, but no stock at home.

And you don't feel like going out for another shopping, or no food vendors in your neighborhood at that time...

In such a case, a few slices of bread can help.

Texture of bread changes dramatically when cooked in hot boiling liquid for a few minutes; turns out like rice noodle.

 

So shred your bread thinly, and put it into your favorite soup, and cook as usual.

This way, you can create some noodle soup look alike.

 

And soup-soaked bread is also a lot more filling than eaten dry; you won't be hungry again too fast...

Good morning.

Today's breakfast: Chunky Bread Curry Stew.

Ingredients:

White bread(chopped into dice), carrot, eggplant, onion, potato, chicken thighs, snake beans (chopped up), tofu(bean curd), and water.

 

I put in all of the pre-cooked stuff, to clear inside my fridge, for the planned defrosting.

 

*Bread can be any kinds.

 

Seasonings:

Chicken stock, curry powder, soy, oyster, BBQ sauce, and ketchup.

Good morning.

This morning, around 4am, I woke up  to the sound of unseasonal rain(quite unlikely at this time of the year in northern Thailand).   Later, it also started to thunder.

 

Today's pre-dawn breakfast: Soymilk Soup Noodle with poached egg.

 

Ingredients: Yellow noodle, Chinese cabbage, pumpkin, onion, okra, soymilk, garlic shoots(chopped up to inch), egg, water.

 

Seasonings: Chicken stock, soy, oyster, and fish sauce, grated ginger.

Today's Cooking Hack: How to make a Poached Egg without burst(in a microwave oven).

 

1-Pour a little water into bowl(larger one is better; contents won't spill out easily while cooking).

 

2-Crack an egg into it(water controls the temperature rise).

 

3-Make a few small holes on  yolk(serves gas escape while heated).

4-Set the microwave to low(minimum) power(100-200w; depending on your machine).

 

5-Put a gentle cover on its top.

 

5-Cook it for 3-4 minutes(time duration depends of your machine's minimum output).

Advisable to try a couple of times, and find out the most suitable setting.

Today's breakfast: Tuna Vegetables Stew Bowl and Bonito Stock Soup.

Ingredients of the Tuna Vegetable Stew Bowl:

Warm cooked rice(underneath),  (canned) tuna, carrot, onion, and snake beans(chopped to 1/2 inch), water.

 

Seasonings:

Bonito stock, soy, oyster, and fish sauce, salad oil.

 

*In case of tuna with soybean oil, no need to add any oil in cooking. This time, the canned tuna was in brine.

Canned tuna tastes a lot better  with oil, than without it.

 

Ingredients of the soup:

Chinese cabbage, okra, spinach.

 

Seasonings:

Bonito stock, soybean paste.

Today's lunch: Marinated Pork Vegetable Bowl, and Potato Pumpkin Salad.

Ingredients of the main dish:

Warm rice, shredded lean pork, bean sprouts, carrots, and cucumber.

Meat and vegetables(other than cucumber) are pre-cooked before mixing.

 

Seasonings:

Soy & oyster sauce, vinegar, sugar, grated garlic, and (tiny amount) of chili powder.

 

Ingredients of salad:

Coleslaw, onion, potato, pumpkin, and tomato.

Onion, potato, pumpkin are pre-cooked.

 

Seasonings:

Mayonnaise, soy & oyster sauce, pepper.

Today's breakfast: Egg-Dropped Milk Bread Porridge.

Ingredients:

Milk, white bread(2 pieces), chicken mince, onion, okra, potato, pumpkin, garlic shoots, beaten egg(1-2), and water.

 

*Chicken, onion, potato, pumpkin are pre-cooked.

  Bread can be any kind. Or can be substituted with rice/noodle(readily eatable)  as well.

 

First, put meat and vegetables. Next, seasonings. Then, milk, water, and diced bread. Mix them well.

Finally, pour beaten egg all over on them.

Will be tastier if you add some stock to the egg, too.

 

Seasonings: Chicken stock, soy, oyster, and fish sauce, grated ginger.

 

Cooking duration: 500-600w for 3-5 minutes(depending on your device).

 

If you place your bowl in a Microwave-Safe container(big enough for your bowl) when you cook it,

Warm rice, (canned) mackerel, carrot, onion, snake beans, potato, tomato paste,

and water.

Pork stock, ketchup, BBQ sauce, soy and oyster sauce, plum sauce and grated garlic, tiny amount of chili powder.

Tomato paste, (pre-cooked) okra, Chinese cabbage, and potato.

 

Seasonings:

Chicken stock, ketchup, soy, oyster, plum sauce, and sugar.
