If you add the right amount of sugar you end up with none after the yeast has fed. If you add no sugar the yeast starves and the bread doesn't rise properly.

brianburi Posted March 5 Posted March 5 Sugar does not need to be added to yeast, it feeds off the sugar in flour. Unless the Law in France has changed baguettes must only consist of four ingredients: Flour Water Salt Yeast. Another myth I often hear here, is ''use warm water'' I use water at 10-18c and the doughs always rise. I used to work in a bakery but retired at 50 yo due to ill health, Still baking though at 69yo now, It was all that standing.... 1
