Renowned Filipino chefs Marc Nacua and Princess Anne Uy showcased their culinary prowess at this year's "Taste of the Philippines: A Global Culinary Journey," hosted by Guevarra’s by Chef Laudico. The event, held in September, featured their unique blend of Filipino flavors with international techniques, drawing attention to the rich heritage and innovation of the Philippines.

 

Both chefs have distinguished themselves in the international culinary scene. Marc Nacua, known for his exceptional pastry skills, has over 15 years of experience, including a tenure at Melbourne’s Crown Casino. His accolades include being named Dessert Champion at the 2024 World Food Championship in Australia and a Top 7 finalist at the World Food Championship in the USA. His dishes often resemble art, showcasing bold and colorful presentations.

 

Princess Anne Uy has made her mark in Melbourne's culinary landscape, with experience at renowned venues such as Nobu, Crown Casino, and Marvel Stadium. Her achievements include a Silver Knife at the Bocuse d’Or Australia (2025) and second place in the Seafood category at the World Food Championship (2023) in Dallas. Her culinary style blends Filipino flavors with Japanese and modern Australian techniques.

 

At the exclusive launch attended by BANDERA, attendees witnessed live cooking demonstrations and tasted the chefs’ collaborations with celebrity chefs Jac and Rolando Laudico. The special menu featured unique fusions of classic Filipino dishes, such as Umami Lechon Belly Roll and Prawn Toast Kare-Kare Bonito by Chef Princess, and innovative desserts like Dried Mango Rum Baba by Chef Marc.

 

Princess Anne stated, "Being part of Taste of the Philippines is both an honor and a responsibility." She emphasized the event's role in showcasing Filipino cuisine globally and inspiring pride among the younger generation. Chef Marc added, "Through every dish, I aim to bring not just my skills but also the resilience, creativity, and warmth of the Filipino spirit."

 

The venue, Guevarra’s by Chef Laudico, is celebrated for its cozy ambiance and heritage, adding to the event's cultural significance. Known for its bestsellers like Angus Beef Tapa and Bellychon, the venue highlighted the fusion of tradition and innovation.
