I have a non-immigrit O visa which was extended annually (support Thai wife) for the last 2 years. I just extended it again using the criteria for a non-immigrit ED extension (education). The procedure was pretty simple. The only thing that seemed a bit strange is they didn't change the auctual visa. I still have a non-immigrit O but the extension that was granted was done with the paperwork for an education extension.

There was no bank paperwork, rental agreement, or anything else normally associated with a visa extension based on marriage.

Has anyone else ever changed or extended a visa in this manner?

This was done in Chiang Mai.

I see that you have fallen prey to one of the more common misconceptions about the visa.

The visa allows you to travel to Thailand.

The entry stamp or, if you obtained an extension of stay, this extension stamp is your permission to stay in Thailand, not the visa.

When you obtained your extension of stay to live with your Thai wife, it was not your non-O visa that got extended, it was your permission to stay. You received this extension of your permission to stay for a particular reason, which you indicated on the application form TM.7 every time you applied for your extension. When your circumstances change, you can apply for a new extension of stay for a new reason, reflecting your new circumstances, and this is what you did.

Each reason for extension of stay has its own set of criteria and requirements, the details of which you can find in National Police Order 606/2549.

So Maestro, from what you said......in theory, if I get divorced, finish school, and get a job here in Thailand before my extension expires, I should be able to extend it again based on the business criteria. Do you think that would that give me a problem getting a work permit based on the fact that the auctual visa is a non-immigrit O and not a non-immigrit B?

No problem at all.
