Great work and they have risen really well huh.

Have you got a recipe for carrot muffins? I have juts bought a muffin tray... Grateful for any suggestions from "the experts" out there!

Sorry, no carrot muffin recipe yet, will have a look next couple of weeks.

......and they have risen really well huh." You are right, the most important part when making Panettoni.

It's a very heavy dough and it takes hours for proofing them. I started with them at 9am and finished around 4pm when taking them out of the oven.

If interested here's my recipe:

Ingredients Amount Unit

Yeast 40 g

Milk 250 g

Flour 650 g

Butter 200 g

Sugar 150 g

Salt 5 g

Lemon skin 5 g

Nutmeg 2 g

Egg yolk 150 g

Orange peel 80 g

Dried fruits, mixed 120 g

Raisin 150 g

Almond 80 g

and i have to tell you that they were great tasting too. being a chocolate monster i have to say that i preferred the chocolate one, but thats not to take anything away from the pannettone.
