You can pay to have the passports returned to you by EMS when you apply. I was there just a couple of weeks ago - I think the cost was 35 baht per passport.

Does your wife have any residence permits etc for other countries?

I ask because my missus went to renew her passport ten days ago and they wouldn't return her old passport by post because it contains her UK residence permit. She had to go back in person to collect both the old and new passports.

No, she has no permits or visas save for expired Shengen visas.

Good point for others to note though.

Probably just get them to post them out unless we're around Bangkok for 3 days.
