Does anyone know how easy it is to obtain prescription meds in Chiang Mai?

If you mean "real world" prescription meds, yes, yes, very very easy all over the country, altho there are still a few meds that are really restricted.

Codeine (with a mild pain killer such as ibuprofen) and Ritalin (called Rubifen here) are examples of restricted drugs that require a medical doctor's prescription, but the list is shorter than in a typical Western country. If you try a couple of local pharmacies that turn you down, it's time to spend at least 250 baht asking a doctor for a script.

You will have a hard time finding opioid, barbiturates, and such and even then pharmacies don't stock those and you'd need to get them from a hospital.

A friend of mine got hit by a motorcycle and broke his wrist and all they gave him was paracetamol and ice.
