Hi........no doubt you have been to SUBWAY and AuBon Pair..........how do they keep vegetables and meats fresh behind the counter?

My guess is that they are keeping the vegetables cool and meats warm.

What are the devices called? Where can you purchase something similar?

If there is an expert who knows the answer, please explain how the process works. Thanks for any input.

There are 2 different devices:

To keep meat, sauces etc. warm it's called "bain marie".

I suggest you google this word and you can see it.

For keeping salads, dressings etc. cold it's a similar device.

as Thaigerd already suggested, the "bain Marie" is a stainless steel tray which holds hot water in which stainless steel containers are placed which contain the goods, for certain type of roasts, grilled goods there are UV lamp devices, for salads, cold buffets, storage, display there are refrigerated units...in Bangkok Ram IV Rd. there are several Companies who do custom made to measure, Somerville another Company with ready made and custom made stuff, and 75 are some of the Prof's. in Thailand.
