I need a recipe for some sort of whole meal/grain cracker/biscuit using brown rice.

I'm on a diet and it's going great but I'm not getting enough fiber (I won't press the details on you in the food forum) regardless of how much fruit and veg I eat.

And I need something to snack on during the day to distract my attention from more fattening items.

So hi-fiber, sugar free, low fat recipe please. (And simple, I can cook but I ain't no baker).

short bread cookies are out of the question than :o - the following: will give you plenty of fiber besides essential vitamins, anti oxydants etc etc and at the same time taste a hel_l of a lot better than some dusty brown rice cookies:

1 cup oats + 1 cup of lightly roasted walnuts + 1 cup of lightly roasted sunflower seeds - all available here

4 egg whites at room temperature (this is really important!) 3/4 cup or less of sugar or honey

preheat the oven to 400F

beat the eggs with sugar or honey until stiff

add the oats, seeds and nuts also if you like a dash of vanilla extract or a glosh of Baileys(increases calories but also flavor) fold well

take the cookie sheet out of the oven, line with parchment paper and spoon the mixture on the cookie sheet place the cookie sheet in the oven, close the door and after 10 minutes, turn the heat off leave the cookies in the oven over night without opening the door

The next day you'll have crisp cookies full of goodness - the amount of sugar depends on you - I would start with 1/2 cup - alternatively you can use Honey - try until it suits you - for cost reasons I would leave the walnuts out until you have found your perfect sweetnes level

Thanks John, could be a bit sweet for me though.

I was thinking of something like a dry cracker type biscuit.

well that's simple, a cup of wholeweat flour - a cup of rye flower - a cup of sunflower seeds - mix well than add just a tablespoon of olive oil and enough water and kneed to make a pliable dough - let rest for 1/2 hour than roll out to about 3mm thickness on some baking paper lift onto a tray- cut your crackers to the desired shape/size and sprinle with very course sea salt bake in a low oven until nicely colored - let cool for 1/2 hour in the turned off closed oven than remove and finish cooling

You can vary this by adding nuts instead of the sunflour seeds and you can also sprinkle them with sesame seeds and the course salt - by using course sea salt sprinkled on the top , you can actually use less salt than if you would add salt to the dough direct

Scotcher Shortbread

3 1/2 cups rolled oats

2/3 cup raw sugar

1/4 cup flour

3/4 cup butter, softened

1/2 tsp salt

1 teaspoon vanilla

1. Preheat oven to 325 F (about 162 C)

2. Place all the ingredients in a bowl and work together lightly with a wooden spoon. Press into well-buttered 9x13 pan. Bake 30 minutes until done. Cool 10 minutes.

Oats are a far better bet for getting fiber than rice, as previous posters have acknowledged by posting oat recipes.
