Don't know where you can buy it, but it's really easy to make:

200 ml mayonnaise (Kraft is best - all the other brands seem to be sweetened)

3 tbsp capers, drained and chopped

3 tbsp gherkins, drained and chopped

1 small shallot, finely chopped

squeeze of lemon or lime juice

3 tbsp chopped fresh parsley

salt and pepper

Just mix together and serve.

The mayo, shallot, lime, salt and pepper are all available at any supermarket. The capers, gherkins are available at places like Villa, Foodland, Emporium or Siam Paragon. The parsley is the only tricky one. Freshmart usually has it, and Foodland does sometimes.

Not quite:

Tesco mayonaise (white face of label with yellow sides) says 1% sugar

Kraft label says "CONTAINS LESS THAN 2% OF SUGAR" (on-line, I dont have a physical one from Thailand - since I compared at the store and decide the Tesco White/Yellow label had the least sugar - not mention a better buy). I think it stands to reason that if it were 1% or less, they'd say so.

Be sure to get the Tesco label with a white face and yellow sides (my jar has a pic of a ham sandwich on a burger bun in the white area of the label) - there is another Tesco brand, with a different color scheme, that has a higher sugar content. The other "Asian-style" mayo's can be up to 5% sugar :D:)

Other than that, your recipe does look like it would be nice - luv capers.

I use this recipe but we are up the boonies and gherkins are not easy to come by.

I am looking for a viable Thai substitute and have had OK results with pickled mustard . Does anyone else have any recommendations or experience of alternatives.

You also can add a few drups of tabaso and some cream (not whipped).

Dill Pickle to the rest of us. Same reciepe I use. I just use normal white onion. Use Chinese parsley - available everywhere.

Chinese parsley is more akin to celery in taste. In fact, I use it as a celery substitute (in stews, tuna salad, etc) when my local Tesco or Makro stocks-out of western celery (which is quite regular).

If the recipe calls for flat-leaf parsley, I would suggest taking the extra time to find the real deal, if at all possible.
