When finished, cut in half lengthwise, and scoop out the potato leaving the halves intact (as shells). In a bowl, mix the potato you scooped out with the following: -butter -crumbled, crispy bacon -sauteed onions, scallions & garlic -blanched broccoli, small pcs. -shredded Cheddar or Pepper Jack cheese -salt & pepper -a little cream or milk (optional) Now, fill the empty potato skin shells with the mixture from the bowl. Bake again, for about 20 minutes, or so. Try a bowl of chicken curry over browned-top, cheddar mashed potatoes... amazing! Laap moo works great too, it's like a Thai shephard's pie. Boyce Posted February 21, 2011 Share Posted February 21, 2011 Well lets start with where to buy good potatoes Our supplier in Laem Din is finding it increasingly hard to find the Chiang Mai potatoes and sells us the sweet Malaysian spuds, which taste like large yams Makro has good tasting spuds.
