Which are the best rental insurance companies for apartments in Chiang May? Can we buy a rental insurance only for a few months? How much is it?

Try AA insurance. If I'm correct they are the company provided by Thai Visa so look at the sponsors on here.

Another suggestion is to buy one of the remote controlled motion sensor alarms that have a keychain remote (They can be bought at HomePro or Oishi (Sp?) Electronics)...

Install it and make sure you "accidentally" set it off a few time to let all the neighbors you have it ;)

If you read the fine print of the insurance policies you will see that they cover very little in terms of reimbursement for loss of personal effects.
