The entire family could move to the city and they could do quite well if they all lived in a shared house just like they in the country. Some people just don't want to move. Give them the story they want and get a pay check. They use the same sob stories they use on the customers to get them to give more money. 10k per month would be for a waitress that never goes with customers. An actual bar girl going home with customers is going to make far more than that, can get the numbers Tommo quotes and possibly far more.
