My gf 2yr UK visa is due to expire on the 8th, can we still visit the UK if we leave Thailand on the 7th??

If your girlfriends visa expires on the 8th then she must leave the UK by that date, so the answer is no, she would need a new visa.

I don't understand.... My Thai visa is valid to enter the country up to the expiry date so UK is different system??

Thanks for the info, we have now applied for another 2yr visa. Could you also advise how long she can stay in the UK with a 2yr family visa???

A Visa for a Family Visit allows the holder to stay in the UK for up two six months in any twelve, whilst this is a convention and not enshrined in law the visa holder would need to have compelling reasons to exceed this.

Also you need to remember that a visa only allows the holder to travel to the UK, it doesn't guarantee admission, the IO at the UK Border would still need to be satisfied that the visit is a genuine and the visa holder is not attempting to circumnavigate the settlement process. Refusal at the Border is not common, but it can happen, the IO would need to be able to convince their manager that the visa was obtained fraudulently or there had been a material change since the visa was issued.
