I am a UK national with a 60 day Tourist Visa that I extended for another 30 days. I want to stay in Thailand for another 3 weeks after my extension is over. Can I do a Visa run from Chiang Mai to Mai Sai and get another 30 day Visa Exemption? Or do I have to fly out and fly back in?

You can get a 30 day visa exempt entry without a problem since you are not on an exempt entry now.
