How long is a double-entry tourist visa valid?

I received my new double-entry tourist visa on 1st December, and it says I must enter before 28th February (in 3 months time). I plan to apply for 2 extensions (30 days each time), so that would give me a total of 6 months stay in Thailand. During this time, I also plan to take a holiday in other Asian countries during 2 months, so the frame for this whole visa period would be 8 months from date of application.

Is there any requirement once I have fulfilled the requirement to enter Thailand before 28th February 2015 that I must complete my 2 stays in Thailand before a certain time period counted from date of visa issuance? Or can I choose any time in the future to enter on my second entry? Because on the actual visa in my passport, is says nothing about last valid date for entry.

You must make your second entry before 28th Feb.

You must use both entries of the visa on or before the enter before date of February 28th.

The visa is a bus pass and Thailand is the bus. It allows you to get on the bus two times on or before 28 Feb, your bus pass expires on 28 Feb and you have to buy a new one!

So if I apply for a 30-day extension in the middle of January, I would need to leave a few days before 28th February and then immediately return again to use my second entry, right?

And there is no big risk that the immigration will refuse second entry when I do it immediately? So I would have to skip the 30 day extension application in January and stay outside of Thailand 1 or 2 weeks before entering again?

Correct.

There is no problem with returning the same hour you leave.

Why is that the case? I would've thought that it was the 1st entry since the OP got his visa on the 1st Dec. Visas are valid for 3 months before you enter Thailand, just like the ED visa where you can get the visa & then come in the 1st time within the 3 months "enter before" date. So why is a double entry tourist visa different that both needs to be used by then?

Enter before 28th February.

Means all entries must be made by that date. Even if it was a triple entry.

After that date the Visa is invalid.
