Mainly because they like to feed away from the water hole at night, and then head back to the water to spend the day there.

That means they often make contact with humans on the trails to the water hole in the morning when they are testy and only really want to get back to the water for a nice day long soak there.

As far as the hippos are concerned it's the pesky humans that in their way.
