Is it possible to leave Thailand on an existing passport, renew that passport whilst in New Zealand, for example,

then arrive back using your "new" passport whilst having a re-entry permit/ retirement extension in your old one?

I'm thinking given this potential situation, maybe the new passport is only given a 30 day stamp and a trip

would be required to immigration to transfer say an existing retirement extension to the new passport?

Clarification would be appreciated.

You can get the new passport and show both passports on entry. They will stamp you into the country up to the date allowed by the valid re-entry permit in your old passport.

You will then need to go to your local immigration office to have your stamps transferred to the new passport. Dependent upon the immigration office you have to use you may need a letter from the NZ embassy asking them to transfer the stamps.

Thank-you
