I'm not familiar with the term "stink bug". However, it might refer to มวน. This is from the RID. I won't bother translating, but you can check the scientific names to see if they match.

น. ชื่อแมลงหลายชนิดในหลายวงศ์ เมื่อโตเต็มที่มีปีก ๒ คู่ ปีกคู่หน้าค่อนข้างยาว แคบ
เนื้อปีกบริเวณโคนแข็ง ปลายเป็นแผ่นบางอ่อน ปีกคู่หลังอ่อนเป็นแผ่นบางตลอด
เมื่อพับปีกจะแบนราบไปตามสันหลัง แต่บางชนิดก็ไม่มีปีก ปากเป็นท่อยาวคล้ายเข็ม

Thank you very much for that. I think it is correct. I have Tessaratoma javanica on my list as the lychee/longan stink bug.

Apparently they and other types of stink bugs are popular as food in the Isaan region.

Tessaratoma fits with what my wife votes for. "Popular name":

แมงแกง (maeng kaeng)

Sometimes seemingly misspelled, as you also find: แมงแคง, like here:

(but likely a simple misspelling comparing with post of AyG)

Wife says, that they not only stink, but spray a poisonous liquid which harms your eye.

Thank you for that. I am afraid that the first link will take me some time to get through.

Looking at the last link, it seems that Tessaratoma papillosa has the same English name (lychee/longan stink bug) as the Tessaratoma javanica.

I will have to check that.

Some of these stink bugs/shield bugs are beautiful, but I wouldn't even think of eating them (even if they didn't stink). We all have different tastes.
