My present passport expires in Sep this year. My 1 year retirement extension is due for renewal 3rd May. Immigration will no doubt only give me until Sep for the retirement extension. After I get my new passport and take it into Immigration, will I get back the May 3rd date in the new passport.?

No - why not get your new passport before the May renewal date and save extra trips/fees - a passport is almost useless for travel with less than six month validity in any case.

You will get the extension until Sept.

You will then have to start over again with a new passport.

Personally I would get your new passport now.
