I have a friend coming who fancies himself a chef. He asked my where he can buy "authentic" Chiang Mai sausage. Can anyone point us in the right direction. I believe raw to cook at home.

Wororot market for spicy and each talad has a vendor or 3.

IMO by far the best for quality, low fat and flavour (not too spicy) is at talad Mae Hia, You can't miss the stall, one of 2, and always busy with orders ... must sell tonnes per week!

Just about every market and often raw on the street stalls prior to cooking,as said, Mae Hia market is good. Learn the Thai words for it or take a picture on your phone if not sure what to look for.

Your friend's culinary expertise is not exactly going to be stretched!

Talad translates as market.

If you mean Sai ua, I have never seen it "raw," as in uncooked.

If someone has, I'd be interested where.

Sai ua is Northern Thai sausage, which is spicy.

Talad means "market" in English.

Mae Hia is south-southwest of the airport.

Many talad vendors will sell it uncooked, sometimes cryovac packed if you want although we've found it is far better cooked and re-heated in a frypan or bbq.

For the fusion fans it goes very well with Brie or Camembert and a touch of Stilton.

And a nice Port?

Best to go out early, before 9am, to kad luang, talat wararot, kilometers of sai ua being delivered, write this down, AW SAI UA DIP .... there are more elegant ways to say it but this will get you there.

It really varies in taste and consitancy.... I remember an early Anthony Bourdane eppisode, maybe first time here, he hated it, said it tasted like sawdust, heavy lemongrass version. ....another epesode he loves them.

I don't think the Warorot market sai oua are that great. They are OK but nothing exceptional.

For a very tasty and well made Sai Oua that is vacuum packed go to Khun Mohr in Soi 17 Nimmanhaemin. This restaurant is owned by a lady who was a medical doctor and who cares about the ingredients and the hygiene of her operation. If you go to a talad/kad and buy from a stall you have no idea about the ingredients or the cold chain under which the sausage has been prepared or kept. Normally it is only available cooked and frankly I would not want to buy it raw.

There is one shop in Warorot that only sells pork products and they sell masses of Sai Ua each and every day and especially busy weekends when they have been know to run out. Guarantee this place outsells all others in the market combined.

Where? if you know where th escalator that hasn't run for years is just walk 20 yards straight back away from Chang Moi and look for the crowded stall with the blue sign.

Raw version he is thinking about probably refers to Nam, which is quite different, but to farang eyes could be confused.

Bromers, I suspect you get the shits often. Getting everything you eat checked by a medical doctor only worsens that problem.

Thrown into a tomato sauce in place of Salami works wonders.

Is that arrogant enough for ya. ?

best sai oua comes from Lamphun. the company logo is a safari hat. they always come to the festivals at the Convention Center and sell hundreds and hundreds of kilos (frozen) to those in the know. they also deliver on orders of 5 kg or more - even to C.M. we used to place an order often but haven't recently. if i can find the card or get the name from the wife, i will post it.

I agree.

Also, I believe this brand was available at the Thai food market on the Super Highway on the south side almost across from the Mae Jo Road. I haven't been to that market in a while (the road construction wasn't nice).

There was a topic about 5 years ago and this brand came up. Someone posted that a relative took over the place and it wasn't as good. I have never noticed in difference in the quality and taste.

No, he's clearly talking about uncooked Sai Ua. Very easy to find: nearly all the shops that BBQ the stuff will also have it raw so you can grill yourself.

I've bought it raw myself at the Mae Hia market vendor. (Named Ton Makhaam if I recall correctly although there's not much of a sign. It's easy to find though, out front.)

It seems to be identical to a Vietnamese sausage called "Gio Heo." I ate it sometimes in Saigon.

Chiang mai gate market also sell this sausage.... great stuff. Buy by weight is the norm, and worth every penny.

Agreed. And there is one particular lady opposite the fruit stalls near the 7/11 that consistently tried to charge my husband 100-120 baht for sausage he knows should be around 30-40 baht. (And she knows he isn't a tourist, rather unpleasant woman but the man at the neighbouring stall is fair but the sausage is average).

Not a connoisseur myself, but Mr K is and he likes to go to the morning market at Chiang Mai Gate for it.

they sell it by the weight. 30-40 Baht only gets you a 10 cm piece of sausage. 100-120 is about right for enough for 2 persons. most people from Bangkok go to one lady inside the market who is an elderly lady with white hair. the smallest quantity she sells is 500 grams. there is always about 20 people buying from her at any given time. she is not friendly, prefers to only sell to Thais and won't take an order from a Chinese tourist. we have tried hers but think the place in Lamphun is much better.

There was a bit of a wait and a queue.

Wongnai have put up a saiaua comparison HERE and our Mae Hia shop features as one of the favourite 2 of top 5.

looks like the comparison is of shops/restaurants/small vendors in C.M. proper; and does not include wholesalers, direct order, high volume sellers outside of 50000, etc.

the place in Lamphun has less oil than any of those in the 2nd to last photo. also no bone fragments, gristle, etc.

this is the place we order from (5 kg. minimum order)
