Well, If you ask Google about nutmeg in American breakfast sausage. Most of the recipes that pop up from the search....Alton Brown, Martha Stewart. Queen of the Double wide etc etc....all use nut meg. It is used in Louisiana in there breakfast sausage recipes as well. Try it.

I make all of my own food and spend considrrable time with recipes. I enjoy looking at as many recipes as possible for a particular dish and comparing similarities and diffrences. always in search of a particular ingridient that helps to put what I make over the top. last night I studied Thai bbq ribs and cooked the tradional way and then in ways with various sauces. So today its a tamarind bbq sauce . smoked baby backs and a thai herb chilli dipping sauce just to try out....no nutmeg though.

I'm not going to fault all American cuisine just because they aren't very good at breakfast.

There are some delicious recipes here for you to try out, even if the bloke that cooks it sounds like he's doing soundtracks for porn sometimes!

I would like to expand a little on the post I submitted on copycat Jimmy Dean pork sausage.

When buying ground pork, look for mixture that has more fat content, especially for sausage as this brings out the flavor.

In America we have a saying "Fat, dumb and happy" Thats me. Let me point out, my posts are or American readers. People grew up eating foods provided by their families, so we are what we eat. Thailand is a good example, for the most part Thai's eat thai food, understandable.

This sausage is very good with sausage gravy and biscuits or just sausage patties in biscuits (american buttermilk biscuits).

I had forgotten that for the last 2 years, 2014 & 15, Rob Sausage King has supplied the US Embassy in Bangkok with Jimmy Deans for their 4th of July party. 50 kilos if my memory serves me right.

Also he supplies a regular monthly order of about same quantity to them.

Must be doing something right.

john

Me I am a Pork Sausage, link type, a British Banger or I will happily pig out if pushed, on a Bratty, charcoal grilled by choice.

The McDonald's sausage patty is 'similar' to the Jimmy Dean recipe, but it seems to leave out the cayanne pepper, and uses less sage.

Good, but not 'very' good. These Sausage King 'Jimmy Dean' sausages are 'very' good!

The company that sells the original "Jimmy Dean" brand sausage packages them as both link sausage and bulk sausage. Link sausage doesn't work very well on an toasted "English Muffin" or buttermilk biscuit. They roll off...

So no ham for you, eh? Or Balogna, Salami, Pepperoni, Corned beef, Prosciutto, or any of the hundreds of sausage varieties.... Too bad. Tasty stuff!

Sausage king wieners can't be beat.

thumbsup.gif

Certainly worth a try.

I did pick up a package of his Italian sausage to try, but haven't cooked them up as yet. I've got my fingers crossed...

T&M (I think that's it... Two initials, anyway) make some excellent German sausages... several different varieties, and all very good.

There 'was' a butcher in Pattaya some years ago that sold fantastic sausage here in Rimping, and his Cumberland sausage was the best I've ever tasted. Unfortunately, he passed away.

One of the local butchers is selling a Cumberland sausage, but it's the wrong shape, the wrong grind, and overpowering in tastes. Cumberland sausage needs to be so coarse you and almost still see pieces of pork, but this new fellow here has it ground as fine as a wiener.

I think you mean TGM, Thai-German Meats.

No... I'm familiar with them, and their foods aren't bad... But this other company... only TWO initials... is FAR superior! Rimping-Chotanna had a rather large selection of their stuff, but recently are only carrying 3-4 different items. It's in the fresh meat case rather than in the usual hanging rack section.

Yes, it's easy to make many different styles of sausages. While living in Japan, I was unable to buy almost any good sausage without traveling four hours to an import shop in Kobe, a choice of bratwurst or frankfurter, and the prices were ungodly high! So I learned to make my own breakfast sausage, Italian sausage, and chorizo out of necessity. But even though I could get good tasting sausage, I could never re-create the taste of some of the ones that I really loved. And it always involved at least a 2-3 kilo batch. Without a large freezer, that can get to be a problem. It's nice to be able to just go into the supermarket and buy enough for one meal.

Moreover, even if you completely don't process it at all, then your body will process it for you.

Folkguitar, the company is G&M. They do make bloody good sausages and small goods.

I haven't been to their outlet/resort yet but apparently it's pretty good.

Having returned from Europe a few months ago, I do miss quality cold cuts, sausages and cheeses.

I was amazed at the selections in Florence and great pricing too.

Tasty, yes. But consider this

The International Agency for Research on Cancer (IARC) has classified processed meat as a carcinogen, something that causes cancer. And it has classified red meat as a probable carcinogen, something that probably causes cancer. IARC is the cancer agency of the World Health Organization.

Processed meat includes hot dogs, ham, bacon, sausage, and some deli meats. It refers to meat that has been treated in some way to preserve or flavor it. Processes include salting, curing, fermenting, and smoking. Red meat includes beef, pork, lamb, and goat.

That IS true.... It's a well researched proven fact. And it's something we need to keep in mind.

Sooo.... Do NOT eat 47 pounds of processed meat per day for 37 years as it WILL DEFINITELY INCREASE your risk of cancer by 06%!

I use smoked ham or bacon sparingly to flavor pasta and such. There is a difference between "fresh" type sausages such as Jimmie Dean patties, Italian or Sai Ua these need refrigeration and should not be eaten raw. The more dangerous are dry salami, lup chong and other types that can hang unrefrigerated for years and don't rot. Sodium nitrate is common in many of these products that are cured. That is supposed to be the worst health risk.

Luckily these products are packed with flavor so a little bit goes a long way....enjoy.

Had a nice long black hair in my G&M bacon, bought from Rimping. It's overrated, quality down.

Plus prices have risen quite a lot,and never any Ham at least when I go to RimPing.

A nicely made khai thee-ow (thai omelet with herbs/spring onions and light spicing) and isaan sausage (the quality ones, mostly meat not filling, not just any old isaan sausage). Just as good as English or American breakfast IMO.

Concentrate the cravings on things that matter, where the local alternative is rubbish? Beer, bread and pizzas come to mind!
