If you are not phased by just winging it.

Jump in your car and just drive. There are 1000's of great places to the South of Hua Hin.

Too many to even try and list, but next to impossible as everyone's tastes are different.

As others have said, one that I would recommend is Ao Manoa

Very few Farangs romeijoe. Infact, I have never seen any lol The beach area in the Military base is just a small part. Outside you have more beaches and quiet restaurant and Bar areas. A deck chair is 50 baht and 2 can eat a good meal with the beach vendors at 300 Baht. You will love it there.

Dolphin bay, Bangkrud/Bangkrood/Bangkrut and Ao Manao.

You can't be serious.  Dophin Bay, dreadful place.  Problems with sewerage.  Required by management to change room after first night.  Awful breakfast.  Run down.  I posted a TripAdvisor review of the place after our stay, and on the basis of it Management offered a free repeat stay.  I didn't take them up on the offer.  Never again.

It has 1000s of locals on the weekends.

I like this place, a bit south of Hua Hin.  http://x2resorts.com/resorts/kui-buri/

Convenient for Sam Roi Yot National Park, too.

There are a bunch of resorts near X2.  Very nice beach.  The headland has a nice walk up and over the hill.  Few restaurants nearby.  A small problem with jelly fish at times.  We had a room right on the beach for 2k/night.  Fantastic.

Ao Manoa is never crowded, just have to pay 20bht to enter via the military area, good restaurant and plenty of space - see photo from my last visit.

Closed to Hua Hin, about thirty or so min. Is Khao Kalok, Pak Nam Pran. Plenty of small and larger resorts. Small ex pat nightlife scene. Decent restaurants.  Famous as a kite boarder destination when it's the season. So not bad for swimming. Across from the Villa Maroc resort is a small expat run bar. The owner and wife can suggest rooms and restaurants motor bike rentals.

Overall a nice friendly area.

One place I love is Khao Tao beach (about 30 mins south of Hua Hin), its quite, Khao Tao resort is good and right on the beach. It has bikes, canoes etc for guests also a house that sleeps 6 and other nicely decorated villa/rooms.

Ao Manao (Wing 5) in Prachuap is arguably the best beach in Thailand. Its stunning, Krabiesque (sic)limestone formations, very clean, suited for kids (shallow bay) and no known rip offs. Prices are fixed and printed on banners (even the prices of the food). The soldier run the facilities, bath and shower rooms and so on. Best would be to stay in a hotel in Prachuap town, enjoy the boulevard at night and go to Ao Manoa (3 km distance) during the days.

Ban Krut is another hidden gem, though can get noisy in the weekends and holidays. When visiting Ban Krut from Monday to Friday. you will find a sleepy Thai village with superb beach and temple on mountain. Also in Ban Krut we've never experienced any rip offs.

Both Ao Manao and Ban Krut are (still) the sabai sabai we all love about Thailand.

20baht to enter Ao Manao? You've been had mate but farangs do need to register when entering from Prachuap side but that of course is free. No need for passport just enter time and destination in the book on the counter.

If you are planning on being there on a weekend best to book hotel as the Bangkok crowd invades. Agree it's best to stay in Prachuap and just stroll around enjoying the seafront. Been visiting for 10 years and still a very good spot.

We found Ao Manao good too several years ago, the military-hotel had plenty of space Sunday-to-Thursdays, but was busier at week-ends, nice little museum of the Battle of Prachuap Khiri Khan nearby !

Do you have to bring chairs and umbrellas or are they available?

There is no entrace fee to Ao Manoa. You even do not have to register. This is gone long time ago. Just greet the soldier at the gate. Beach chairs are 20 Baht. Public showers 5 baht. Food and beverages served to where you sit. Go and see the cute and very friendly langur families living at Khao Lom Muak within the military area. Leave Ao Manao to the back to visit Khlong Wan fishing village.

Highly recommend Ban Krut or Ban Grood, we stayed at Proud Thai resort which is run by an elderly thai gentleman. It is quite there during the week but livens up a little bit at the weekends it is mainly thai tourists here with the odd falang.

The beach is lovely as is the temple overlooking the beach at the north end.

We only found this place as we wanted to break the journey for  Surat to Bangkok  glad we did as will definitely return.
