1st issue: So I'll be doing a 60 day extension on my new Non-O soon and was wondering whether I need my child to go with me? (Some older posts stated it was a requirement).

2nd issue: I am currently waiting for my new Work Permit. Will I be able to get a year's extension with my child's documentation, Work Permit and Letter from company certifying income of more than 40 000 Baht per month. (I know I can just get a normal work extension, but then my extension gets cancelled if I stop work whereas if I go the family member route this isn't the case.)

Your child will need to be with you when you apply for the extension.

Are you the legal father of your child by legitimization of your parenthood or by marriage? That is a requirement to apply for a one year extension of stay.

A income of 40k baht or more from working can be used to apply for the extension. You will need 2 or 3 months of tax payment receipts to prove the income.

I am the biological father of my child. Where would I get a tax payment receipt? (I usually get a yearly report).

Being the biological father of you child does not make you the legal father here. See the following topic.

You employer would be deducting income tax from your salary every month. You can get the receipts for those payments. If you have been working here before and filed a annual  tax return they would want a copy of that also.

Are you still married to your child's' mother or have you divorced?

If you are divorced you will need proof of at least joint custody of your child.

If you are still married to you child's mother most immigration offices will only allow you to do an extension based upon marriage since the extension based upon being the parent of a child is intended to be for single parents.

So they issued a visa based on me being the father of, but won't give me an extension for the same reason. sigh. So what documents do I need for the 60 day extension based on marriage?

Not sure why you wanted the non-o based upon being a parent rather than marriage.

For the 60 day extension to visit you wife she will need to be with you. Marriage certificate plus a copy, copies of her house book registry and ID card.

For the one year extension the extension getting it based upon marriage would be easier than for being the  parent of a Thai.

The visa and the extension are issued by two different entities and have different requirements.

Ok, thanks for the clarification joe. In answer to your question: I originally got the visa on child purely because it was less documents (basically just birth certificate). I assumed extension would be simpler with child but have nothing against doing it the marriage route. ;)
