They do ask sometimes "ow pet my?", do you want it hot? Answer, "ow" or "may ow". Want, or not want. Or "kee met", ie how many chilis, for eg som tam, larb, yam and geng. 2 or 3 is enough for me. Of course it helps if you're culturally savvy, at least enough to be able to know what hot is the average Thai, if such an entity existed.
