I don't think you would be able to do the first extension based on income unless you've been transferring 65k/month for a year at the time of application given the the UK embassy doesn't do the income letter.

Why? Still can go to a nearby country and make an e-visa application, just don't have to physically attend the embassy. I am guessing they will all be asking for some proof of "residence", entry stamp/hotel booking, etc.
Yes. As of tomorrow through the Thai e-visa portal. Depending on your location the application will either be processed in Hanoi or HCMC but you will not need to attend either the embassy or consulate.

- For the UK address I would use your UK driving licence. Whilst not listed on the embassy website it has been reported as being accepted.
- You can show 800k in your Thai account. That's what I did (1 month statement).
Doing this you will only submit 1 document with a UK address so ought to avoid any issue with multiple addresses.

I think more interesting than the turnaround time is whether the multi-entry is even going to be possible any more, it is not normally available via the e-visa portal.
I applied in February with a 1 month (January) statement. My 800k had been in my account for 4 weeks at the time of application although the embassy website only asks for "current balance".
