I drink 4-5 large bottles of water a day so not sure if hydration is the issue

Water actually triggers it first thing in the morning

i didnt read all the pages and in no way im a doctor. I also dont know whar you do on your day, maybe you do a lot and sweat a lot.

But one thing i do know and that is that 4-5 big bottles of water (what you mean with big, 1.5 liters?) is way too much. Yes you heard me right, too much. One can drink too much too, not just too little. If you add other things (in case you drink them) like you mentioned Alcohol maybe coffee too and whatnot, you get 8-10L of fluid per day?

I doubt you are running around and do Muay Thai or something so i also doubt oyu need that much of fluid. The problem here is that it washes all of important things out of your body.

You can read about it if you dont believe me. Now also what could be a possibility is that the water you drink is simply not good.... Quite a few reverse osmose suppliers are not really the most hygienic thing .

Diarrhea for 6 months is definitely abnormal. Giardia is high on the list of probables and easily treated. If you are unwilling to see a doctor, ask the local pharmacist for a course of tablets for giardia (10 days). As others have suggested it could be many things and seeing a doctor is the obvious thing to do.
