I seldom go to Starbucks, only if there is no other option. I always tell them to use only 50% of the water quantity in my Americano. With this method the taste is quite ok.

When roasting I usually do enough for a week or so. Directly after roasting the beans need a few days to release gases. Normally ever roaster will sell the beans a few days after roasting. 1
