Yes, best to eat as healthy as possible, to keep immune system primed, for those times you do enjoy foods with added chemicals that may or may not be carcinogens.

I can remember my first trip to America, being flabbergasted by the size of the food portions.

 

Vitamin C is known to block the formation of nitrosamines. Perhaps that's why breakfasts have orange juice and bacon on the menu.

I'm pretty confident at cooking but when it comes to cooking Authentic Thai meals we are way behind and simply cannot cook it the same way a thai does. We can buy most of the basic ingrediants like Lemon Grass kafir lime leaves etc we will measure carefully all the ingrediants and cook say Pad kaprow. Easy enough a few thai sauces and Basil. I can never get it to taste like the G/F cooks it. I've watched her no tea spoons to measure the fish or oyster sauce just bang bang all in the wok 5 mins perfect. Exept they can't fry Eggs.
