If I were to email a Word document containing part English and part Thai to an iPhone in the US will it display the Thai language properly? OSX does so I'm guessing the iPhone does as well?

no, unfortunately not.

at least at the moment i see mystic rectangles instead of thai letters.

it will be supported as soon as it will be available in thailand...
