I'm trying a new recipe for the dish "boiled eggplant with fermented soybean sauce"

and it doesn't say for how long to boil the eggplant. I dont have much cooking experience.....

Its a soft vegetable, so I was thinking about 20 minutes would be enough, ?

Don't know for certain, but I would have thought 20 mins a bit excessive. Try it on the 10 mins ish and see what happens. It could even be less.

I think even 10 would be excessive. Try doing it in 5 minute increments and taste until you get the texture you desire.
