There are big air conditioned buses from Hadyai to Donsak from where you can get a ferry to Koh Phangngan. Also mini buses from Hadyai to Nakhonsrithammarat, change and get another minibus to Donsak and then the ferry. There might even be a direct minibus but I'm not sure on that one.

There are many travel agency's to, you may want to travel with a tour operater (e.g. Holyday-Tour, Cha-Wang Tour) which maintain direct transfer to Donsak, with MiniBus.

Btw, Hat Yai is a very nice city, cheap accomadation, very good food, Thai and International. My choice there, King's Hotel (just opposite is a Tour-organizer, for Penang, KL, Singapore, Suratthani, Puket) and for best food, try the japanese "Fuji" Restaurant in some shoping center. Not to expensive!
