I'm sure a normal table would be fine, and I'm sure many people were changed on a normal table, but frankly I can see the benifit in a table that's 37-40" high rather than one that's 27-30" high for constant changing/bathing/etc.

Does anyone have any advice where perhaps a specific baby item like this can be bought? Robinsons at Central Airport doesn't have any, neither does Central at Kad Suan Kaew. I'm pretty sure I could find this at home, but I need help finding even the most obvious things here. :/

Ban Tawai or any decent joiner / cabinet maker would knock one up quick smart.

Like you said, a normal table would be fine.

We bought a baby changing table and never used it.How often are you around the table when the baby needs changing?We really feel that it was and is a waste of baht.
