My wife and I were married in the U.S.A. We have been married for 8 years and just had our first child 2 months ago in the U.S.A. She is visiting relatives in Thailand with the baby right now. I am going over in a few weeks.

Since we were married in America we never registered our marriage in Thailand. So, as far as the Thai government is concerned she is still a single woman.

My question: Is there any benefit to having our marriage officially registered in Thailand?

If you ever want to live in Thailand, it will be beneficial. It might also be helpful for registering the birth of the baby at the Thai embassy to confirm Thai citizenship of the child, but not necessary. (Both the US and Thailand have no problem with the child having dual nationality).
