You'd think I'd know this after 4 years in Chiang Mai, but I've always waited until the last minute.

For example if my Visa finishes on the 29th of June, if I do an extension, can/will they extend from the current visa's finish date? or will they extend from the date I go in to do the extension?

An extension is always given from the date your current permission to stay ends. Doing it early insures you have time to arrange for papers if you forget something and you don't lose any days. You can apply up to 30 days before your current permission to stay ends.
