One thing that would be very useful is if we could collect a directory of competitions/contests for English (e.g. speaking), science fairs, etc.

That list would be very useful on this site.

I don't know how to get this done --- since I almost always hear about a contest after its finished.

I would be willing to collect and organize the information, **IF** I had it.
