Boyce Posted November 30, 2012 Posted November 30, 2012 Hi there members, i wan't to make some dry cure back bacon, BUT i'm stuggling finding a good dry cure mix. anyone know where i can buy a good complete already made, English & USA style dry cure bacon mix. i've tried making my own mix but the taste is not the same. Soak (in a bowl or bag in the refrigerator) the pork belly for 2-4 days in brown sugar and salt (equal amounts) and enough water so that a raw egg that is still intact in the shell floats (remove the raw egg before soaking the pork belly). Then smoke in a smoker (low heat) for 6-12 hours. Yummy.
