I bought some coconut cream by accident … I thought I picked up a can of coconut milk, so I used less of the cream to make what I was cooking.

Can you freeze coconut cream?

I presume not, but better to ask.

How long does it keep in the refrigerator after you have opened the can?

Never tried freezing it but I've kept some in a screw-topped jar in the fridge for 2 weeks and it was perfect after a good stir. The smell will change if it goes off, so you'll know!

Why not try freezing a little of it as an experiment?

Don't save it, use it immidiately: Make a Coco Loco



Pour the rums, vodka, creme de bananes, pineapple juice, coconut cream and sugar syrup into a cocktail shaker half-filled with ice cubes. Shake well, and strain into a chilled highball glass. Garnish with a pineapple wedge, and serve.

You can freeze it. The taste is the same, but the texture isn't - it sort of flocculates. It's fine for things like coconut rice, but I wouldn't use it for a curry or a yam.

Yes, I want to use it in a curry, so I won't freeze.

4 days later, in the fridge, it's still good.

1 oz light rum

Yes, we would not want that coconut cream to go to waste. Pina coladas also work. Be happy.
