I'm about to renew my UK Passport, so I have a nice new one to apply for visa + extension to stay. Seeing as I will then have a new Passport no., and that is used by banks, on my driving licences, company papers etc., in Thailand, will I have to notify all these relevant agencies of the change?

As stated, best to do so. There have been reports on Thaivisa specifically about bank records and member(s) having problems as they did not have current passport details.
