Hi All:
I would appreciate help in the following:

My daughter's real mother died at birth of my daughter and my Thai wife and I have been taking care of her since she was born. My daughter is now 21 yrs old and my wife has legally adopted her when she was 17 yrs old. I have been with my wife for 30 yrs and just got married last year.

I now have found out that there is not any father recorded on my daughters birth certificate.

Is it possible to list me as the father on her birth certificate?

. FYI I hold a Canadian passport. My daughter already has a Thai passport and has been to Canada 2 times already.

Any information would be greatly appreciated

The question is if you are the biologiccal father of the child. I presume so, and in that case you can file to become the legal father of the child at the court. This might require DNA testing but should otherwise not be any problem.

No I am not the biological father and neither is my Thai wife her biological mother. Her mother died at my daughters birth. My Thai wife adopted her before we were married. We have taken care of her as our daughter. If there is not any father listed on the birth certificate I be put on it as the father? It would help getting her into Canada as my daughter would like to go for her masters degree in Canada and work there.

That means you will have to adopt her. If you want it both to be recognised by the Thia government and the government of your own country you will have to follow an international adoption procedure.
