After reading about Jetstar commencing flights from Phuket to Sydney, my wife asked if we could visit Sydney for a long weekend. This sounded like a nice idea because I've never visited Oz either.

We means me (British), her (Thai) and our baby son (Thai/British).

Well, having had a miserable time previously at the British Embassy when she tried to visit the UK, I don't want to get her hopes up.

Can anyone advise what is required for her to visit Sydney as a tourist, accompanied by her British husband and baby son?

All that you need is an application for a tourist visa.

Start by reading this as well as the many other threads about tourist visas in this forum.

If you have specific questions, you only need to ask.

It's still a little chilly down here at the moment. It may be better to wait for the warm weather to arrive before you visit Down Under. (for her sake anyway. :o )

I belive Jetstar don't start going to HKT until around November, so starting to warm up by then.

As for visa issue really cannot see why it would be that great an issue, should I imagine be much easier than for the UK, afterall there is no compelling reason for her to want to stay, unlike say your homeland.
