Local fisherman sold these behind a wet market for 600 baht per kilo, his most expensive kind of fish. Says it has no bones.

Do they mean that it's been de-boned? 

All fish have bones but many can be eaten including them such as small fish (ex. anchovies) and deep fried like sheathfish are often served here.
