The bugs they sell on the insect food market are not cockroaches. These are swimmer beetles. That's a totally different kind of beetle.

You do a disservice to street vendors,  cockroach is never ever one of those high protein snacks. 

stopped eating them ,long ago, they dont wash between there toes,

I did talk to a woman about this and she told me there is a huge difference in cockroaches from cities

that are found in sewers and unsanitary conditions and are not consumable and field/farmed cockroaches

from the countryside which are clean. Still not for me, but that was the explanation.
