I have learnt something from it as maybe others have too...

Maybe you could start a new thread about MAKING coleslaw?

Went to sizzler on weekend and their Vietnamese colslaw was great

I know this sounds kind of Nanny but if you're storing the transferred mayo in jars, even under refrigeration, you should sterilize the jars first.  I didn't the first time I bought a bag of mayo at Macro.  It filled 2 1/2 used mayo jars so I put the 2 full ones in the back of my fridge.  Took one out a month later and it didn't look good; smelled off when I opened it. I had to toss it all.  I think bacteria in the jars I used found mayo a medium they liked.  I had washed the jars but hadn't sterilized them.  

I just stopped buying it in bulk and went back to one jar at a time.

I've tried Hellmens here when trying to recreate currywurst, chips, mayo and zenf but it just didn't taste the same...

I am into making jams, so knew i had to sterilize the jars,keeps long enough,

just have to sniff it before use, just in case.
