How can it be 'seld defence' when she stabbed him MULTIPLE times?

Yes. He dared her to stab him, but didn't make it clear how many times, so she took a guess and went for it.

Because contrary to the movies and their ingrained BS about knives it never is that idiotic steel on steel sound, one polite plunge, and presto the guy's dead on the hoof.

Invariably in high adrenaline situations the stabber just keeps on pumping until the stabbee stops. In the time that he'd have taken to bleed to unconsciousness from the initial wound many extra holes get inflicted.

we don't allow knives in our household, both agree if we had a big fight they'd get used

just use scissors to cut meat when cooking

Many stabbed prisoners would give you an argument re the safety with scissors ethos ????
